Sear over medium-high 5–6 min per side.

Rest for 5 minutes, then slice and cut into cubes.

Whisk yogurt, Parmesan, lemon juice, Worcestershire, and garlic. Stream in olive oil. Whisk in water to reach a pourable consistency.

Season with salt and pepper and anchovy paste. Set the creamy dressing aside.

To assemble the salad, in a large bowl, toss romaine with half the dressing.

Make the no-mayo Caesar dressing
- In a bowl, whisk Greek yogurt, Parmesan, lemon juice, Worcestershire, and grated garlic until smooth. Slowly stream in olive oil while whisking to emulsify. Thin with cold water a teaspoon at a time to a creamy, pourable consistency. Season to taste with salt, pepper, and anchovy paste (or capers).
