The result: a salad with bold flavor and a super crisp texture that eats like a full meal. Lets see the ingredients and substitutions below.

FOR THE CHICKEN

  • Chicken Breasts: Boneless, skinless chicken breasts work best for this Caesar chicken salad. You can substitute chicken thighs if you prefer a juicier cut or even rotisserie chicken works well too.
  • Olive Oil: Helps the chicken sear evenly and adds flavor. You can substitute with coconut oil or avocado oil.
  • Kosher Salt & Black Pepper: Simple seasoning keeps the chicken versatile while preventing it from being too simple or too bland.
  • Italian Seasonings: Adds subtle herb flavor that pairs perfectly with healthy caesar salad dressing. You can also use garlic powder for extra garlicky flavor.

FOR THE HOMEMADE CAESAR SALAD DRESSING

  • Greek Yogurt: The base of this healthy caesar salad dressing, adding creaminess and protein. Substitute with low fat or plant based yogurt if you like.
  • Parmesan Cheese: Finely grated for a smooth, savory finish. 
  • Lemon Juice: Brightens the easy caesar salad dressing and balances richness. Substitute with fresh lime juice.
  • Worcestershire Sauce: Adds depth and umami. You can substitute it with soy sauce and balsamic vinegar.

  • Parmesan Cheese: For finishing and extra flavor. Pecorino romano cheese works too!

Instructions

Pat dry the chicken breasts and toss with oil, salt, pepper, and Italian seasonings.

Sear over medium-high 5–6 min per side.

Rest for 5 minutes, then slice and cut into cubes.

Whisk yogurt, Parmesan, lemon juice, Worcestershire, and garlic. Stream in olive oil. Whisk in water to reach a pourable consistency.

Season with salt and pepper and anchovy paste. Set the creamy dressing aside.

To assemble the salad, in a large bowl, toss romaine with half the dressing.

Top with sliced chicken, croutons and Parmesan. Drizzle on more dressing.

Finish with a few cracks of black pepper and a generous squeeze of fresh lemon to wake everything up. Toss gently once more so the dressing kisses every leaf, then pile into bowls. Add a little extra Parmesan and a handful of croutons on top, and serve right away while the romaine is crisp and the chicken is still warm.

Hint: Dry your romaine really well, spin, then blot. Water thins the dressing and kills that classic Caesar crunch.

  • Grilled Chicken Caesar Salad — Grill the chicken instead of pan-searing for a smoky twist on this healthy Caesar chicken salad. Follow the recipe for the rest of the steps.
  • Crispy Chicken Caesar Salad - The golden, crispy pan-fried chicken, fresh crisp romaine lettuce, and shaved parmesan cheese, this salad is tossed in a rich, homemade Caesar dressing that’s perfectly tangy and full of flavor.
  • Spicy Chicken Salad Recipe — Add a pinch of chili flakes or a dash of hot sauce to the healthy caesar salad dressing. All other recipe instructions will stay the same.

Ingredients
  

For Chicken

  • 1½ lb boneless skinless chicken breasts cut into halves
  • 1 tablespoon olive oil
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried Italian seasonings

For Caesar Dressing Using Greek Yogurt

  • ½ cup plain Greek yogurt
  • 2 tablespoons finely grated Parmesan
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1 small garlic clove finely grated
  • 2 tablespoons olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon Black pepper
  • 1 teaspoon anchovy paste

For Salad

  • 2 large heads romaine chopped
  • ¼ cup Parmesan grated
  • 2 cups whole-grain croutons

Instructions
 

Cook the chicken

  • Pat chicken breasts dry. Toss with 1 tablespoon olive oil, 1 teaspoon Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper. Sear in a hot skillet over medium-high heat 5–6 minutes per side, until the thickest part hits 165°F/74°C. Rest 5 minutes, then slice and cut into bite-size cubes.

Make the no-mayo Caesar dressing

  • In a bowl, whisk Greek yogurt, Parmesan, lemon juice, Worcestershire, and grated garlic until smooth. Slowly stream in olive oil while whisking to emulsify. Thin with cold water a teaspoon at a time to a creamy, pourable consistency. Season to taste with salt, pepper, and anchovy paste (or capers).

Assemble the Chicken Caesar Salad

  • In a large chilled bowl, toss chopped romaine with half the dressing to lightly coat. Add sliced chicken, crunchy croutons, and extra Parmesan. Drizzle on more dressing to taste.

Finish & serve

  • Crack on fresh black pepper and add a squeeze of lemon to brighten. Serve right away while the romaine is crisp and the chicken is still warm.
