This recipe is all about simple prep, fresh ingredients, and bold lemon flavors that bring out the natural sweetness in the succulent shrimp. You don’t need anything fancy, just a handful of pantry staples and a quick squeeze of fresh lemon juice to brighten everything up. Lets see the ingredients list below!

  • Shrimp - Shrimp is one of the best quick-cooking proteins you can add to your weekly seafood recipes, and the best part is how nutrient-dense it is without being heavy. It’s rich in essential fatty acids that support heart and brain health, and packed with Vitamin B, especially B12, which helps with energy and metabolism. I have used large shrimp for this recipe. You can use jumbo shrimp (adjust cooking time slightly), or medium shrimp or any shrimp size.
  • Olive Oil - Helps coat the shrimp with seasonings, you can also use avocado oil, olive oil or melted butter as a substitute.
  • Lemon Juice - Adds brightness and cuts through the richness. Lemon juice can be replaced by lime juice too.
  • Salt - Enhances the overall flavor of the shrimp.
  • Seasonings - Paprika gives that smoky depth of flavor, Italian seasonings gives a herby note, garlic powder, onion powder, black pepper and cayenne pepper.
  • Lemon Zest - Intensifies the lemon flavor and adds freshness. If you don’t have zest, increase lemon juice slightly or use lime zest.

How to make easy oven-baked shrimp skewers recipe

Start by preheating your oven to 425°F. We want that nice high heat to roast the shrimp quickly and lock in all that juicy flavor. Line a sheet pan with parchment paper or foil for easy clean up, then place a wire rack on top. This helps the heat circulate around the shrimp for even cooking and a slightly crisp finish.

If you’re using bamboo skewers, be sure to soak them in water for at least 15 minutes to prevent them from burning in the oven. I used metal skewers, which saves a little prep time and makes cleanup even easier.

  1. In a large mixing bowl, combine olive oil, lemon zest, paprika, garlic powder, onion powder, Italian seasoning, salt, black pepper, cayenne pepper, and a splash of lemon juice.

  1. Before adding the deveined shrimp, give them a quick pat dry with a clean kitchen towel or paper towel—this helps the marinade stick better and ensures they roast instead of steam. Toss the shrimp into the bowl and gently coat them in the seasoning mix.

  1. Thread 4 to 5 marinated shrimp onto each skewer from the sharp end of the skewer, making sure to leave a little space between each one so they cook evenly. Place the assembled skewers in a single layer on your prepared wire rack.

  1. Pop them into the oven and bake for 8 to 10 minutes, or until the shrimp are pink, firm, and opaque. Keep an eye on them, as they cook fast, and we don’t want to dry them out!

Once they’re done, remove the shrimp skewers from the oven and let them rest for a minute. Garnish with a sprinkle of chopped parsley or any fresh herbs.The texture of the shrimp turns beautifully tender with lightly crisped edges, and reaches the ideal internal temperature (about 120–125°F for shrimp) making sure they stay juicy, not rubbery. Plus, you can pair them with so many different side dishes, from salads and rice bowls to roasted veggies. The hint of seasoning with the lemon flavors makes them incredibly versatile and hard to resist!

Hint: For a little extra char or crisp edges, you can broil them for the last 1–2 minutes, just keep a close watch so they don’t burn.

  • Swap Italian seasoning for Cajun or Creole spice blend to make spicy Cajun shrimp skewers—serve them with ranch or a cooling yogurt dip.
  • To make Garlic Butter Shrimp Skewers, use melted butter instead of olive oil and add minced fresh garlic in place of garlic powder for bold, buttery flavor.
  • For a sweet and spicy twist, mix together honey, soy sauce, sriracha, and lime juice to create a glaze. Brush it over the shrimp before baking and again just before serving.

Storage Instructions for Oven-Baked Shrimp Skewers

In the Refrigerator: Let the shrimp cool completely before storing. Remove from skewers and place in an airtight container. Store in the fridge for up to 3 days.

To reheat: Warm in a skillet over medium heat for 2–3 minutes or reheat in the oven at 350°F until heated through. 

In the Freezer: Cooked shrimp skewers can be frozen for up to 2 months. Place in a freezer-safe container or with parchment paper between layers.

To reheat: Thaw in the fridge overnight, then bake at 375°F until hot, about 6–8 minutes.

  1. Use larger or jumbo shrimp, since it holds up better in the oven and stays juicy without overcooking.
  2. Patting the shrimp dry before marinating helps the seasoning stick and prevents excess moisture during baking.
  3. Marinate the shrimp for at least 15 minutes before baking. Wrap it with a plastic wrap and set aside, for extra depth, you can marinate up to 2 hours in the fridge.
  4. If using wooden skewers, soak them in water for 15–20 minutes to prevent burning in the oven.
  5. Shrimp cooks fast, about 8–10 minutes at 425°F. Overcooking can make them rubbery, so keep an eye on them!
  6. Use a wire rack for even roasting since it helps hot air circulate for a more evenly roasted result.

FAQ

Can I use frozen shrimp for this skewers recipe?

Yes you can! Just make sure to fully thaw and bring it to room temperature
and pat dry the shrimp before marinating. Excess moisture can affect the texture and flavor of the dish.

Do I have to use skewers?

Nope! You can simply spread the seasoned shrimp on a parchment-lined baking sheet and roast them the same way, no skewers needed.

How do I know when the shrimp is cooked or not?

Shrimp are fully cooked when they turn opaque pink and firm. They also curl into a "C" shape. Avoid overcooking the shrimps, they only need about 8–10 minutes in the oven.

Ingredients
  

  • 1.5 lb large raw shrimp peeled and deveined (tails off)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1 teaspoon dried Italian seasonings
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon lemon zest
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional
  • Fresh parsley for garnish

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil, and place a wire rack on top. Set it aside.
  • (If you're using wooden skewers, soak them in water for at least 15 minutes to prevent burning. I used metal skewers, so I was able to skip this step.)
  • In a large bowl, combine olive oil, lemon zest, paprika, garlic powder, onion powder, Italian seasoning, salt, pepper, cayenne pepper, and lemon juice. Mix well with a spoon or fork until fully combined.
  • Pat the shrimp dry using a clean kitchen towel to remove any excess moisture.
  • Add the shrimp to the marinade and toss until they are evenly coated.
  • Thread 4–5 shrimp onto each skewer, leaving a bit of space between each piece to ensure even cooking.
  • Place the prepared skewers in a single layer on the wire rack.
  • Bake in the preheated oven for 8–10 minutes, or until the shrimp are pink, firm, and opaque. Be careful not to overcook them!
  • Once done, remove from the oven, garnish with chopped fresh parsley, and serve with lemon wedges and your favorite dipping sauce—like parmesan ranch dip or garlic aioli.

  • Use fresh or thawed shrimp for any shrimp skewer recipe to get the best results.Pat them dry to help the marinade stick and prevent sogginess.
