To make things even easier, you can use store-bought vanilla buttercream, like I did for my Valentine's Day Cake Pops, and turn this into a simple semi-homemade version of the famous Starbucks Birthday Cake Pops. Lets see the ingredients below!

For the Vanilla Cake:
- All-Purpose Flour: You can substitute it with a 1:1 gluten-free flour blend if needed.
- Cornstarch: It creates a softer, bakery-style cake texture.
- Baking Powder & Baking Soda: These help the cake rise properly and stay fluffy.
- Salt: Balances the sweetness and enhances flavor.
- Butter: It adds richness and flavor to these easy cake pops. Use softened butter for best results.
- Sugar: Granulated sugar sweetens the vanilla cake perfectly. You can substitute it with granulated brown sugar or coconut sugar.
- Eggs: Eggs bind the batter together, keep the sponge bouncy, and create structure.
- Vanilla Extract: Essential for that classic vanilla birthday cake flavor.
- Buttermilk: You can use both dairy free or dairy buttermilk. But you can’t skip it. It keeps the cake soft and moist. If you don’t have buttermilk, you can make your own by mixing milk with a little lemon juice or vinegar.
For the Vanilla Buttercream Frosting:
- Butter: It creates a creamy frosting that helps bind the cake crumbs together. Both dairy and dairy free are fine.
- Powdered Sugar: Sweetens and thickens the frosting. Powdered coconut sugar is a good substitute if you prefer it.
- Heavy Cream: It helps loosen the frosting to the perfect consistency. You can use dairy free heavy whipping cream or coconut cream as a substitute.

Instructions (How To Make Homemade Birthday Cake Pops From The Scratch)
If you don’t know how to make cake pops, don’t worry. Just follow the steps carefully and chill the cake balls properly before dipping. This easy cake pop recipe is beginner friendly.

In a bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.

In a large bowl, beat butter and sugar for 2–3 minutes until light and fluffy. Mix in the oil.

Add the eggs one at a time, beating well after each. Mix in vanilla extract.

Add the dry ingredients in 3 additions, alternating with buttermilk (start and end with dry). Mix just until combined.

Pour batter into the pan and smooth the top. Bake 22–28 minutes, or until a toothpick inserted in the center comes out clean.

Make the Frosting, In a bowl, beat butter until creamy. Add powdered sugar, milk, and vanilla. Mix until smooth and spreadable.

Crumble the cooled cake into fine crumbs in a large bowl. Add frosting gradually (about 2–3 tablespoons at a time) and mix until the texture is moist and holds together like dough.

Roll the mixture into 1-inch balls and place on a lined baking sheet. Chill in the fridge for 30–45 minutes until firm.

Melt candy melts or almond bark according to package instructions. Add pink food color.

Dip the tip of a lollipop stick into melted candy and insert into each cake ball (this helps secure it).

Dip the entire cake pop into melted coating, letting excess drip off.

Simply melt the pink candy melts according to the package instructions and use them as the coating for your cake pops. - Chocolate Birthday Cake Pops: Replace some of the flour with cocoa powder and use chocolate frosting for rich chocolate Birthday cake pops. White sprinkles look beautiful against a dark coating. If you want to go all the way with chocolate, try these Brownie Cake Pops.
- Funfetti Cake Pops: Fold colorful sprinkles directly into the vanilla batter before baking. This variation makes the inside of your easy cake pops look extra festive and fun. OR instead of folding the sprinkles in the batter, you can simply add them as topping, just like Christmas Cake Pops.
