I love making puff pastry hearts when I want something sweet but not heavy. They’re perfect for special occasions when you want dessert to feel intentional without spending hours in the kitchen like valentines day or Mother's day. With store-bought puff pastry and a quick homemade whipped cream, these heart-shaped pastries come together in under 30 minutes.

With Valentine’s Day around the corner, these puff pastry hearts make a stunning Valentine’s Day dessert for date nights, family dinners, or even classroom parties. Pair them with chocolate-covered strawberries or serve them alongside my Nutella Puff Pastry or Nutella strawberries for a complete dessert spread.

If you enjoy baking with puff pastry, you’ll love how versatile this recipe is. Once you master these hearts, you can easily adapt them for other holidays, brunches, or afternoon tea.

Ingredients & Substitutions

Ingredients setup: puff pastry sheets, raspberries, cream, chocolate

For the Hearts:

  • Puff Pastry sheet - Store-bought puff pastry works perfectly for this recipe. Make sure it’s thawed but still cold so it puffs properly in the oven. Homemade puff pastry can also be used if you prefer.
  • Egg Wash (Egg + Heavy Cream) - The egg wash gives the puff pastry hearts their deep golden color. If you don’t have cream, you can use milk or brush with egg alone.

Whipped Cream:

  • Heavy Whipping Cream - Cold heavy cream whips best and creates soft, fluffy swirls. Make sure it’s straight from the fridge before whipping.
  • Powdered Sugar - Used both in the whipped cream and for dusting. You can substitute with powdered coconut sugar if needed.
  • Vanilla Extract - Adds warmth and depth to the whipped cream. Vanilla bean paste works beautifully as well, but use it in little quantities.

Filling & Finish:

  • Fresh Raspberries - Raspberries add a bright, tart contrast to the sweet cream. You can substitute with strawberries, blueberries, or sliced cherries.
  • Powdered Sugar -  For presentation and sweetness.
  • (Optional) Chocolate Drizzle - Melted dark or milk chocolate adds richness and makes this heart shaped puff pastry feel extra indulgent.

See recipe card for quantities.

Hint: Keep the pastry cold. Cut the hearts, then chill them on the tray for 10 minutes before baking, taller layers, flakier crunch.

Storage & Reheating Tips for puff pastries

Room Temperature: Assembled puff pastry hearts are best enjoyed immediately. The pastry stays crisp for about 2 hours at room temperature.

Refrigerator: Store unfilled baked hearts in an airtight container for up to 2 days. Keep whipped cream and berries separate until ready to serve.

Freezer: Baked, unfilled hearts can be frozen for up to 1 month. Thaw at room temperature and re-crisp briefly in the oven before filling.

Reheating: Warm unfilled pastry hearts in a 300°F oven for 5 minutes to restore crispness. Avoid microwaving as it softens the pastry.

Top Tips For Making Perfect Puff Pastry Hearts

  • Keep puff pastry cold before baking for maximum rise.
  • Use a sharp cutter to ensure clean edges that puff evenly.
  • Don’t overfill, too much cream can soften the pastry.
  • Assemble just before serving for the best crunch.
  • Dust powdered sugar right before serving so it doesn’t melt.

FAQ

Can I make puff pastry hearts ahead of time?

Yes. You can bake the hearts up to 2 days in advance and assemble them just before serving.

Why didn’t my puff pastry puff properly?

The pastry may have been too warm or the oven not hot enough. Puff pastry needs high heat to rise.

Can I use frozen berries?

Fresh berries are best. Frozen berries release too much moisture and can make the pastry soggy.

Can I make these without whipped cream?

Yes. You can fill the hearts with pastry cream, mascarpone, Nutella, or even ice cream.
