Using that sauce, I created my kids' favorite, Pesto Ricotta Pasta, which is always a huge hit. Now, I’m excited to introduce my husband’s favorite dish featuring pesto sauce: Pesto Butter Salmon. I’ve crafted a Pesto sauce recipe without pine nuts, using walnuts as a budget-friendly alternative. If you’re looking for a classic basil pesto sauce, follow the recipe below to create your own:

Ingredients

  • 3 ½ cups fresh basil leaves
  • 2 cups toasted, chopped walnuts (or substitute with pine nuts or your favorite nuts)
  • 5 garlic cloves
  • ¼ cup grated Parmigiano-Reggiano (use genuine block cheese, not pre-grated packages; vegans can substitute with nutritional yeast)
  • ½ tsp lemon juice (or to taste)
  • 1 cup oil (coconut or olive oil works well)
  • Salt and pepper to taste

Directions

  1. Combine Ingredients: Puree the basil, nuts, and garlic in a food processor until finely chopped.
  2. Add Lemon Juice: Drizzle lemon juice over the mixture for a bright, fresh flavor.
  3. Incorporate Oil: Slowly add the oil while processing until the mixture achieves a smooth consistency.

Mix until well combined. Salmon Pesto Butter is ready , set it aside.

The cooking time may vary slightly depending on the thickness of the fillets, so keep an eye on them to ensure they are perfectly done. Once baked, carefully transfer the salmon to serving plates to maintain its shape and juices. Garnish with fresh lemon slices for a bright, tangy flavor and a sprinkle of fresh basil for added aroma and color.   • Crunchy Topping:  For a bit of crunch, drizzle the salmon with panko crumbs before placing it in the oven.
  • Lighter Option: This is a very buttery recipe, but you can also prepare it with olive oil.
  • Pesto Butter Versatility: Pesto butter is heavenly on salmon, but it can also be used with pasta, over meat, and as a spread over rolls and bread.

How To Store Cooked Salmon

Refrigeration: Place any leftover pesto butter salmon (you should be so lucky) in an airtight container and store it in the refrigerator for two or three days. You don’t want to store any fish longer than that. 

Freezing: If you are freezing your salmon, let it cool before you do, then wrap it in an airtight bag. It will freeze for three months, but its natural texture may change somewhat.

Reheating: To reheat the salmon, thaw it overnight in the refrigerator. Place it in a baking dish and warm it in the oven for 10 minutes at 400 degrees.

Tips For Preparing Pesto Butter Salmon

  1. Make sure the salmon is patted dry for crispier skin.
  2. Use the best pesto you can find. Quality matters. Try the homemade version listed below. It’s my favorite.
  3. Salmon, like most fish, dries easily. Keep an eye on it while it bakes and use a food thermometer to ensure it reaches 125 degrees.

I probably don’t have to emphasize to my readers that homemade tends to be much tastier than store bought. While decent pesto sauce is readily available at any market, try making your own in just a few steps. This recipe will make approximately 16 servings. Basil is the main ingredient, of course, but the food police won’t come knocking if you run short and need to add a bit of spinach.

Can I use frozen salmon for this recipe?

Yes, frozen salmon works well. Thaw it completely in the refrigerator before cooking for best results. Use a kitchen towel to remove the excess moisture before using it for the recipe.

How do you know the salmon is cooked perfectly?
