This easy casserole recipe is great for busy weeknights, Sunday dinners, or whenever you’re in the mood for a warm and satisfying meal. INGREDIENTS AND SUBSTITUTIONS

  • Cooked Shredded Chicken – You’ll need three cups of cooked shredded chicken. You can also use rotisserie chicken, leftover chicken breasts, or freshly cooked chicken for this easy chicken casserole recipe.
  • Butter – Adds richness and helps sauté the vegetables.
  • Onion & Celery – These two ingredients will enhance the flavour of the filling. You can substitute celery with leek.
  • Garlic – Fresh minced garlic works as a great aromatic. You can use chives if you want to ditch the garlic.
  • Flour – Thickens the creamy sauce.
  • Poultry Seasoning – Adds that classic chicken and dumpling flavor.
  • Salt & Pepper – Adjust to taste.
  • Chicken Broth – It’s the base of the sauce (to get that cream of chicken soup). You can make fresh broth, store bought, or any leftovers.
  • Worcestershire Sauce - Gives the umami depth flavor to the creamy chicken sauce.
  • Frozen Peas & Carrots – They’ll add extra flavor and texture to the casserole.
  • Refrigerated Biscuit Dough – Make sure to use refrigerated and quartered biscuit dough for a crisp and even cooking. Even biscuit mix will work here

INSTRUCTIONS (For Chicken and Dumpling Casserole Recipe )

In a skillet onion, celery and garlic being ready for sautéed.

In a skillet on a medium heat, melt butter followed by onion and celery and sauté for 4–5 minutes.

In a skillet veggies being added and sautéed.

Stir in garlic and frozen carrot and peas.

Flour and seasonings sprinkled over the veggies in the skillet.

Sprinkle flour over the vegetables and stir for 1 minute to form a roux.

Chicken broth being added to the skillet.

Slowly whisk in chicken broth until smooth and slightly thickened.

Shredded chicken being added to the skillet.

Stir in poultry seasoning, salt, pepper, shredded chicken.

Transfer the mixture to a casserole dish. Arrange quartered biscuit pieces evenly over the chicken mixture.

Arrange the biscuit pieces evenly over the creamy chicken filling and lightly press them into the surface so the bottoms make contact with the sauce (this helps them steam and rise). Leave a little space between pieces, they’ll puff up beautifully as they bake. Transfer the dish to the oven and bake for 25–30 minutes until the biscuits are deep golden brown on top and cooked through. Remove from the oven and let the casserole rest for 5 minutes so the sauce thickens slightly and the biscuits finish setting. Spoon into bowls and serve hot.

Hint: Lift one biscuit, the underside should look set, not doughy, and the filling should be bubbling around the edges.

VARIATIONS FOR THIS EASY CASSEROLE RECIPE

Cheesy Chicken and Dumpling Casserole -  If you’re a cheese lover, you’ll enjoy this variation. Just stir in 1 cup of shredded cheddar or mozzarella into the creamy chicken filling before topping it with biscuits. The melted cheese makes this chicken dumplings casserole recipe extra rich and gooey.

Chicken and Dumpling Casserole with Vegetables - If you want to sneak in more veggies, this is the perfect way. Along with peas and carrots, add frozen corn, green beans, or broccoli florets. They blend beautifully with the creamy sauce and make the dish even heartier.

Turkey and Dumpling Casserole -  Got leftover Thanksgiving turkey? Swap the shredded chicken with turkey. It’s a great way to reinvent leftovers. If you have some leftovers from our Turkey Melt Sandwich, that would work great too.

Roasted Veggies: This casserole recipe pairs wonderfully with roasted vegetables, especially if you’re skipping them in the casserole. Try it with Roasted Mini Peppers with Balsamic and Garlic or Roasted Cauliflower and Carrots for extra fiber and flavor.

STORAGE AND REHEATING TIPS FOR CHICKEN AND DUMPLING CASSEROLE

Room Temperature: This casserole is best served hot and fresh, but it can sit for up to 2 hours at room temperature.

Refrigerator: You can store it in the fridge in an airtight container for 3–4 days.

Freezer: Freeze tightly wrapped portions of this chicken casserole for up to 2 months. Or if you’re preparing ahead of time, wrap the dish tightly in plastic wrap and then freeze.

Reheating and Thawing: Reheat the refrigerated dumpling casserole in the oven at 350°F (175°C) for 15–20 minutes. Thaw the frozen casserole in the fridge for 6 hours and then reheat at the same temperature.

  • Cut biscuit dough into quarters so they bake evenly and puff up nicely.
  • Bake uncovered to keep the tops golden brown.

FAQ

Can you put raw chicken in a casserole?

No. Casseroles are always made with cooked chicken. If you use raw chicken, it will either be undercooked or everything else in the casserole will be overcooked by the time chicken is done.

Can I use rotisserie chicken in this casserole?

Yes! Rotisserie chicken works perfectly and saves time. Just shred the meat and mix it in with the sauce. You can also swap in leftover turkey from my Turkey Melt Sandwich Recipe.

What kind of biscuits work best for Chicken and Dumpling Casserole?

EASY CHICKEN AND DUMPLING CASSEROLE (With Biscuit Dough)

Ingredients
  

  • 3 cups cooked shredded chicken
  • 2 tablespoons butter
  • 1 small yellow onion diced
  • 2 stalk celery diced
  • 2 cloves garlic minced
  • ¼ cup all-purpose flour
  • 2 teaspoons dried poultry seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 cups chicken broth low sodium
  • ½ tablespoon Worcestershire sauce
  • 1½ cups frozen peas and carrots
  • 1 can refrigerated biscuit dough (8 biscuits), quartered

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a skillet, melt butter over medium heat.
  • Add onion and celery and sauté for 4–5 minutes until softened. Stir in garlic and cook for another 30 seconds.
  • Sprinkle flour over the vegetables and stir for 1 minute to form a roux.
  • Slowly whisk in chicken broth and Worcestershire sauce until smooth and slightly thickened.
  • Stir in poultry seasoning, salt, pepper, shredded chicken, and frozen peas and carrots.
  • Simmer for 3–4 minutes until the mixture thickens into a creamy sauce.
  • Remove from heat. Transfer the mixer to a casserole dish. Arrange quartered biscuit pieces evenly over the chicken mixture.
  • Lightly press them into the surface, they’ll puff up beautifully as they bake.
  • Transfer the dish to the oven and bake for 25–30 minutes, or until the biscuits are golden brown and cooked through.
  • Let rest for 5 minutes before serving.

Notes

Biscuit tips: Store-bought biscuit dough works perfectly for a quick shortcut, but you can use homemade biscuit dough if you prefer a more from-scratch flavor. Lightly press the dough into the filling so it steams and rises beautifully as it bakes.
Thickening the sauce: If your filling seems thin before baking, simmer it for a few more minutes to thicken. It will also continue to thicken as it bakes and cools.
Make-ahead: You can prepare the filling a day ahead and refrigerate. Add the biscuit dough just before baking.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through.
