  • All-Purpose Flour: Flour is the base for this waffles recipe. It binds everything together and gives these waffles shape and structure. You can also use gluten free flour, oat flour, or wheat flour as a substitute.
  • Brown Sugar: Brown sugar is the major sweetener for this recipe. Without it, the waffles will not even be called a desert.  You can use coconut sugar as an alternative.
  • Baking Powder and Baking soda: Baking powder works as a puffing agent. Without it, waffles will be hard and extremely chewy.  Baking soda creates little pockets of air, making your pumpkin pecan waffles light and velvety.
  • Pumpkin Pie Spice: This is the main flavor ingredient. If you don’t have pumpkin pie spice, you can use pumpkin pie filling instead of puree because it already has the spice.
  • Cinnamon: cinnamon will enhance the nutty flavor of the waffles. Ground or powdered cinnamon can be used.  
  • Salt: Salt helps bring out other flavors and balances the sweetness as well.
  • Eggs: alongside baking soda and baking powder, eggs work to enhance the fluffy and soft texture of your homemade waffle recipe. 
  • Milk (or Buttermilk): Milk keeps the waffles moist and helps with the consistency of the batter. If you want to make your waffles dairy-free, you can use plant based butter. Swap dairy milk with plant based milk if you want.

INSTRUCTIONS (How to Make Pumpkin Pecan Waffles )

Preheat waffle iron and lightly grease with oil or nonstick spray.

Combine the dry ingredients to make pumpkin pecan waffles.

In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.

In another bowl, whisk the eggs, milk, pumpkin puree, melted butter, and vanilla until smooth.

Once done, transfer the pumpkin waffles to a serving platter and top with maple syrup, butter, whipped cream, and  pecans to enjoy while its still warm!

  • Maple Syrup Pumpkin Pecan Waffles: You can use maple syrup instead of brown sugar. When serving the waffles, drizzle a generous amount of maple syrup on top.
