Chia seed pudding with berries

This easy-to-make chia pudding recipe is ideal for meal prep and can be customized with your favorite fresh berries, such as blueberries, strawberries, or raspberries, for a burst of natural sweetness.

Whether you're looking for a vegan chia pudding recipe or a gluten-free breakfast idea, this mixed berry chia seed pudding offers a quick, satisfying, and nutrient-rich option. Loaded with fiber, omega-3 fatty acids, and antioxidants from the berries, it’s a great way to start your day or enjoy a midday snack.

Mixed berry chia pudding ingredients

  • Berries - Fresh or frozen berries, such as blueberries, strawberries, raspberries, or blackberries. I have used all the four berries for the recipe.
  • Milk - You can use any type of milk, including dairy milk (whole, skim, or low-fat) or plant-based alternatives like almond milk, coconut milk, or oat milk.
Ingredients for berry chia seed pudding
  • Chia seeds - The main ingredient of the recipe and I called it a powerhouse of nutrients.
  • Vanilla - Pure vanilla extract or vanilla bean paste, which adds a warm, sweet flavor to the pudding.
  • Maple syrup - A natural sweetener to sweeten the pudding.
  • Greek yogurt - A thick, creamy plain yogurt does wonders here.
  • Sliced almonds - Thinly sliced almonds that serve as a crunchy topping for the pudding.

See recipe card for quantities.

HOW TO MAKE HEALTHY BERRY CHIA SEED PUDDING WITH YOGURT

In a blender, combine ½ cup of mixed berries (such as blueberries, raspberries, or strawberries) with your milk of choice, maple syrup for sweetness, and a splash of vanilla extract. Blend everything together for about 1 minute, or until the mixture is smooth and creamy with no chunks of fruit left. This will give the chia pudding a delicious berry flavor and a vibrant color.
Pour the blended berry mixture into a medium-sized bowl. Sprinkle the chia seeds evenly over the mixture. Stir the chia seeds well, ensuring they are fully incorporated without clumping. Let the mixture rest for about 10 minutes. This allows the chia seeds to start absorbing the liquid and begin thickening. After 10 minutes, stir again to break up any lumps that may have formed and ensure an even consistency.

Cover the bowl with a lid or plastic wrap and refrigerate the chia seed pudding for at least 1 hour to let it fully set. For a thicker, creamier texture, it's ideal to refrigerate it overnight. The chia seeds will absorb the liquid, creating a gel-like consistency that makes the pudding rich and smooth.
When you’re ready to serve, take a glass or jar for layering. Start by spooning 2 tablespoons of the prepared berry chia seed pudding into the bottom of the glass. Add 2 tablespoons of Greek yogurt on top of the pudding layer. Repeat this process—another layer of chia pudding followed by Greek yogurt—until you have beautiful alternating layers of pudding and yogurt.

To finish, top your layered pudding with fresh berries and a handful of sliced almonds for a bit of crunch. If you want an extra touch of sweetness, drizzle a little more maple syrup over the top. Your delicious, healthy, and beautifully layered chia berry pudding is now ready to serve!

Hint: Mix the chia seeds thoroughly and let them sit for 10 minutes. Stir again to break up any lumps, then refrigerate to allow the pudding to gel. This ensures a smooth, flowing consistency instead of a lumpy texture in any chia seed pudding recipe.

Chia seed pudding troubleshooting steps

Start your day with a delicious and nutritious fruit chia pudding that’s as beautiful as it is healthy! The below tips would help to create achieve that.

Chia Seed Soaking Time:

  • Allow the chia seeds to soak for at least 1 hour or overnight. This is crucial for achieving the right gel-like consistency. If you don’t let them soak long enough, the pudding may be runny and not set properly.

Mix Thoroughly:

  • When adding chia seeds to the blended mixture, make sure to mix thoroughly to prevent clumping. Stirring well ensures that the seeds are evenly distributed and can absorb the liquid effectively.

Check for Lumps:

  • After the resting period, check for any lumps in the chia pudding. If lumps form, simply whisk or stir vigorously to break them apart before serving.

Berry chia pudding serving suggestions

I personally love to serve it by layering it like a parfait. Create beautiful layers in a clear glass by alternating berry chia pudding with Greek yogurt and fresh berries. Top with your choice of nuts for added crunch. You can also serve it by:

  • Adding a dollop of whipped cream on top
  • Sprinkling granola over the pudding
  • Drizzling peanut butter or almond butter on top

Substitutions

Berries - If you don’t have fresh or frozen berries, you can use other fruits like diced peaches, mango, or even apples.

Milk - Instead of dairy milk, you can use plant-based alternatives like almond milk, coconut milk, oat milk, or soy milk.

Vanilla - If you don’t have vanilla extract, you can use almond extract or omit it altogether. For a different flavor, consider using a pinch of cinnamon or nutmeg.

Maple Syrup - You can substitute maple syrup with honey, agave syrup, or coconut sugar.

Greek Yogurt - If you want a dairy-free option, use coconut yogurt, almond yogurt, or any other plant-based yogurt.

Sliced Almonds - Instead of sliced almonds, you can use any other nuts like walnuts, pecans, or hazelnuts.

Variations

Feel free to customize the recipe by adding spices like cinnamon or nutmeg, or by mixing in other fruits, nuts, or seeds. This will not only enhance the flavor but also increase the nutritional value.  My favorite variations are:

Lemon Blueberry Chia Pudding:

  • Add lemon juice and lemon zest to the blended mixture for a refreshing citrus flavor. This pairs well with blueberries for a bright, zesty pudding.

Cinnamon Apple Chia Pudding:

  • Use diced apples instead of berries and add a sprinkle of cinnamon and nutmeg. Sweeten with maple syrup and top with chopped walnuts for added crunch.

Tropical Chia Pudding:

  • Replace mixed berries with tropical fruits like mango, pineapple, and coconut milk. Top with shredded coconut and chopped nuts for a refreshing twist.

Equipment

Blender - To blend the berries, milk, maple syrup, and vanilla for a smooth and consistent mixture.

Mixing Bowl - For combining the blended berry mixture with chia seeds.

Serving Glasses or jars - To create beautiful layered servings of chia pudding with yogurt, fresh berries, and toppings.

Storage

Air tight containers: Store the chia pudding in airtight containers or mason jars to keep it fresh.

Refrigeration: Keep the pudding in the refrigerator. It can last for up to 3-5 days. The chia seeds will continue to absorb moisture, so the texture may thicken slightly over time. At the time of serving you can add a tablespoon of milk to slightly thin it up if you desire. Best for meal prep breakfast.

Top Tip

Chia Seed to Liquid Ratio: The standard ratio for chia pudding is about ¼ cup of chia seeds to 1 cup of liquid. If you used too much liquid compared to the chia seeds, the pudding may remain runny.
