Ingredients
  

  • 1 cup fresh mixed berries strawberries, raspberries, blackberries and blueberries, divided
  • 1 cup whole milk
  • 1 tablespoon maple syrup
  • ½ teaspoon vanilla extract
  • 3 tablespoons chia seeds
  • ½ cup Greek yogurt
  • 2 tablespoons sliced almonds

Instructions
 

  • In a blender, add ½ cup of mixed berries, milk, maple syrup, and vanilla. Blend for about 1 minute until smooth.
  • Pour the blended mixture into a medium bowl. Sprinkle the chia seeds over it and mix well. Let it sit for 10 minutes, then stir again to ensure no lumps.
  • Cover the bowl and refrigerate the chia pudding for at least 1 hour, or overnight for the best texture.
  • When ready to serve, layer the pudding and Greek yogurt in a glass. Start with 2 tablespoons of the berry chia pudding, followed by 2 tablespoons of Greek yogurt, and repeat to create beautiful layers.
  • Top with fresh berries and sliced almonds. If you like, drizzle a bit more maple syrup on top and enjoy!

Notes

  1. Allow the chia seeds to soak for at least 1 hour or overnight. This is crucial for achieving the right gel-like consistency. If you don’t let them soak long enough, the pudding may be runny and not set properly. 
  2. When adding chia seeds to the blended mixture, make sure to mix thoroughly to prevent clumping. Stirring well ensures that the seeds are evenly distributed and can absorb the liquid effectively.
  3. When layering the pudding with Greek yogurt, use clear glasses or jars to showcase the beautiful layers. This makes for an appealing presentation and can be a fun way to serve it at gatherings.
