  • Fresh blueberries - Fresh blueberries bring sweet, juicy flavor and a gorgeous natural color to the mocktail. You can use frozen blueberries if fresh ones aren't available but make sure to just thaw them first for best flavor.

  •  Once it’s clear and smooth, remove it from the heat and let it cool.

Ingredients
  

  • ½ cup fresh blueberries (including few for garnish)
  • 10 fresh mint leaves
  • 2 tablespoons fresh lime juice
  • 2 tablespoons vanilla bean simple syrup or honey or maple syrup
  • 1 cup club soda or sparkling water
  • Ice cubes
  • Lime slices for garnish

Instructions
 

  • In a sturdy glass or mason jar, add the fresh blueberries, mint leaves, fresh lime juice, and simple syrup between two glasses. Using a cocktail muddler or the back of a wooden spoon, gently press down and twist just enough to release the blueberry juices and the fragrant mint oils. Be careful not to over-muddle the mint, as it can turn bitter.
  • Fill the glass all the way to the top with ice cubes. The more ice, the colder and more refreshing your mocktail will be!
  • Pour club soda or sparkling water over the muddled mixture until the glass is almost full. The bubbles bring everything together and give the drink its light, fizzy finish.
