Blueberry Mojito Mocktail (Virgin Mocktail Recipe)

Beat the summer with this refreshing Blueberry Mojito Mocktail with fresh blueberries, homemade vanilla bean syrup, lime juice and mint. Served on a tall glass filled with crushed ice and topped with fizzy club soda.

  • Mason jar or serving glasses
  • Cocktail muddler or wooden spoon
  • Mixing spoon

Ingredients
  

  • ½ cup fresh blueberries (including few for garnish)
  • 10 fresh mint leaves
  • 2 tablespoons fresh lime juice
  • 2 tablespoons vanilla bean simple syrup or honey or maple syrup
  • 1 cup club soda or sparkling water
  • Ice cubes
  • Lime slices for garnish
  • Mint sprig for garnish

Instructions
 

  • In a sturdy glass or mason jar, add the fresh blueberries, mint leaves, fresh lime juice, and simple syrup between two glasses. Using a cocktail muddler or the back of a wooden spoon, gently press down and twist just enough to release the blueberry juices and the fragrant mint oils. Be careful not to over-muddle the mint, as it can turn bitter.
  • Fill the glass all the way to the top with ice cubes. The more ice, the colder and more refreshing your mocktail will be!
  • Pour club soda or sparkling water over the muddled mixture until the glass is almost full. The bubbles bring everything together and give the drink its light, fizzy finish.
  • Using a long spoon or straw, gently stir the drink from the bottom up to evenly distribute the blueberries, mint, and lime throughout the glass.
  • Finish by garnishing with a few extra mint leaves, a couple of lime slices, and a sprinkle of fresh blueberries if you like.
  • Serve your Blueberry Mojito Mocktail immediately while it's icy cold and wonderfully fizzy. The mentioned recipe ingredients yields two servings.

Notes

  1. Be gentle when muddling the mint — you want to release the oils, not shred the leaves. Light pressure is all you need for the best flavor.
  2. Vanilla bean simple syrup adds a cozy depth of flavor, but you can easily swap it with honey, maple syrup, or agave if you prefer natural sweeteners.
  3. If you’d like to turn this into a cocktail version, just add a splash of white rum before topping with club soda.
