Ingredients
  

  • 1 cup old-fashioned rolled oats
  • 2 cups unsweetened almond milk
  • Pinch fine salt
  • 3 tablespoons maple syrup divided
  • 1 ½ teaspoon ground cinnamon divided
  • ½ teaspoon vanilla extract
  • 1 large apple cored and diced small
  • 1 tablespoon unsalted butter
  • 2 tablespoons chopped walnuts

Instructions
 

  • In a saucepan, combine oats, almond milk, 1 teaspoon cinnamon and a pinch of salt. Bring to a gentle simmer over medium heat, then cook 5–7 minutes, stirring occasionally, until creamy.
  • Sweeten with 2 tablespoons of maple syrup and add vanilla. Keep warm.
  • Meanwhile, heat butter in a small skillet over medium heat. Add diced apple,maple syrup, and cinnamon. Cook, stirring often, until the apples are tender.
  • Spoon oatmeal into bowls and top generously with the warm apple-cinnamon butter. Add extra cinnamon, walnuts, or a drizzle of maple if you like to enjoy.

Notes

  • Use rolled oats so that your oatmeal is creamy and not mushy.
  • Using almond milk instead of other milks will give a very creamy texture.
  • Don’t overcook the oats or else they will get clumpy when cooled.
  • Don’t add too much sweetener to this recipe as apples are already sweet.
  • If your oatmeal is too runny, give a few extra minutes to thicken.
  • Make sure to use fresh apples so they don’t get mushy or release too much water.
