Slice the vanilla bean lengthwise and scrape out the seeds with a knife.
In a small saucepan, combine water, sugar, vanilla bean seeds, and the whole pod. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.
Let the mixture simmer for 5-7 minutes, allowing the vanilla bean to release its deep flavor. The syrup starts to thicken a bit.
Remove from heat, discard the vanilla pod. Let the syrup cool, then transfer it to a sealed bottle or jar.
