Strawberry Santas (Easy No-Bake Christmas Dessert)

These Strawberry Santas are the cutest no-bake Christmas treats made with fresh strawberries, sweet cream cheese frosting, and mini chocolate chips for eyes, perfect for breakfast trays, dessert boards, or your next holiday gathering.

Equipment

  • Piping bag or ziploc

Ingredients
  

  • 12 large fresh strawberries washed and dried
  • 4 ounce cream cheese softened
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract
  • 24 mini chocolate chips for eyes
  • Red color icing or sprinkle for mouth (optional)

Instructions
 

  • Slice the leafy tops off each strawberry so they can stand upright in a flat base. Cut the pointed tip off each strawberry to make a small “hat” and set the tops aside.
  • In a small bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth and fluffy. You can use a hand mixer or whisk or electric mixer and beat until stiff peaks .
  • Spoon the cream cheese mixture into a piping bag (pastry bag or a zip-top bag with the corner snipped). Pipe a small swirl of filling onto the base of each strawberry.
  • Gently place the strawberry tops back on the cream cheese filling to form Santa’s hat. Add a tiny dot of filling on the tip of each hat for the pom-pom.
  • Press two mini chocolate chips into the cream cheese filling to make Santa’s eyes. Optionally keep a dot for Santa's mouth using red icing if you have it in hand.
  • Refrigerate for about 10–15 minutes to let the filling set, then serve chilled.

Notes

  • Make sure the strawberries are completely dry before adding the filling — any moisture can make the cream cheese slide off.
  • If you prefer a lighter version, you can swap the cream cheese with Cool Whip or whipped mascarpone.
  • Use large, firm strawberries so they stand upright easily when assembling Santa’s body.
  • For a smooth filling, beat the cream cheese until soft before adding powdered sugar and vanilla.
  • Assemble the Santas just before serving for the best texture, or refrigerate for up to 8 hours in advance.
  • Add a tiny dab of frosting on the top of each strawberry to create Santa’s hat pom-pom for a festive touch.
