Ingredients
  

  • 3 tablespoons whole milk
  • 2 tablespoons maple syrup
  • 1 medium egg at room temperature
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup whole grain rolled oats
  • ½ teaspoon baking powder
  • ¼ teaspoon ground cinnamon
  • teaspoon salt
  • 1 tablespoon mini semi-sweet chocolate chips divided
  • Fresh raspberries to serve

Instructions
 

  • Grease a single-serving mug with baking spray and set it aside.
  • In a medium bowl, whisk together the milk, maple syrup, egg, oil, and vanilla extract using a fork until fully combined.
  • Add the rolled oats, baking powder, cinnamon, and salt to the wet mixture. Gently fold them in until just incorporated.
  • Fold in the mini chocolate chips, reserving some to sprinkle on top later.
  • Transfer the prepared oatmeal mixture into the greased mug and sprinkle the reserved chocolate chips on top for extra flavor.
  • Microwave on high for 2 minutes, checking for doneness after 2 minutes. The mug cake is done when it rises and a toothpick inserted into the center comes out clean. If not fully cooked, microwave for an additional 30 seconds.
  • Let the oatmeal mug cake cool for 1–2 minutes before enjoying. For a beautiful finish, top with fresh fruits like raspberries and garnish with a sprig of fresh mint. Enjoy!
