- 3 tablespoons whole milk
- 2 tablespoons maple syrup
- 1 medium egg at room temperature
- 1 tablespoon vegetable oil
- 1 teaspoon vanilla extract
- ½ cup whole grain rolled oats
- ½ teaspoon baking powder
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon salt
- 1 tablespoon mini semi-sweet chocolate chips divided
- Fresh raspberries to serve
Grease a single-serving mug with baking spray and set it aside.
In a medium bowl, whisk together the milk, maple syrup, egg, oil, and vanilla extract using a fork until fully combined.
Add the rolled oats, baking powder, cinnamon, and salt to the wet mixture. Gently fold them in until just incorporated.
Fold in the mini chocolate chips, reserving some to sprinkle on top later.
Transfer the prepared oatmeal mixture into the greased mug and sprinkle the reserved chocolate chips on top for extra flavor.
Microwave on high for 2 minutes, checking for doneness after 2 minutes. The mug cake is done when it rises and a toothpick inserted into the center comes out clean. If not fully cooked, microwave for an additional 30 seconds.
Let the oatmeal mug cake cool for 1–2 minutes before enjoying. For a beautiful finish, top with fresh fruits like raspberries and garnish with a sprig of fresh mint. Enjoy!
- Greasing the mug before pouring the oatmeal batter makes it easier to enjoy and ensures a stick-free oatmeal experience.
