  • Spatula or Butter Knife to spread the hummus

Ingredients
  

  • 4 counts everything bagel sliced
  • 1 cup homemade hummus
  • 2 cups mixed greens
  • 1 cup cucumber sliced
  • 1 cup cherry tomatoes sliced
  • 1 medium avocado sliced
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  • Prep the Veggies: Slice the cucumber, cherry tomatoes, and avocado, and set them aside.
  • Toast the Bagel: Lightly toast the bagel halves until they are golden and crispy.
  • Spread the Hummus: Generously spread hummus on both sides of the toasted bagel.
  • Layer the Veggies: Start by placing the mixed greens on one half of the bagel. Add the sliced cucumber, tomato slices, and top it off with avocado slices. Season with a little salt and pepper, if desired.
  • Assemble the Sandwich: Place the other half of the bagel on top and gently press down.
  • Serve: Slice in half and serve immediately.

Notes

  • Use a flavored hummus like roasted carrot hummus or sun-dried tomato for an extra punch or a regular hummus.
  • Swap the bagel with a whole grain or gluten-free option if preferred.
