Ingredients
  

  • 1 ½ lb. fresh Brussel sprouts
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • 3 tablespoons honey
  • 2 teaspoon crushed red pepper flakes
  • ¼ cup crumbled goat cheese
  • ¼ cup pomegranate seeds

Instructions
 

  • Preheat the oven to 425°F. Line a baking tray with parchment paper and set it aside.
  • Cut the sprouts in half and transfer them to a bowl.
  • Add olive oil, garlic powder, salt, and pepper. Mix well until evenly coated.
  • Spread the seasoned Brussels sprouts onto the prepared baking tray in a single layer. Bake for 20–25 minutes, or until they are golden and crispy.
  • In a microwave-safe bowl, combine the honey and crushed red pepper flakes. Microwave for 10 seconds, just until the honey becomes slightly runny and infused with the pepper flakes' flavor.
  • Once the Brussels sprouts are roasted, remove the tray from the oven. Drizzle the hot honey over the sprouts and toss to coat.
  • Sprinkle the roasted sprouts with crumbled goat cheese and pomegranate seeds. Serve immediately and enjoy!

Notes

  1. Roasting times may vary depending on the size of your Brussels sprouts and the oven’s heat, so check for crispy edges. You want them golden and slightly charred for the best texture.
  2. Make sure the hot honey glaze is warmed slightly before drizzling over the Brussels sprouts. This helps it spread evenly and coat them better.
  3. Sprinkle the crumbled goat cheese over the Brussels sprouts right before serving to keep it fresh and creamy. If you add it too early, it may melt too much and lose its texture.
