Equipment

  • Large Pot
  • Wooden spoon or silicone spatula
  • Square pan
  • Parchment paper
  • Measuring cups and spoons
  • Sharp Knife

Ingredients

  • 6 cups Rice Krispies cereal
  • 1 10 oz bag marshmallows (about 5 ½ cups)
  • 3 tablespoon unsalted butter
  • 1 teaspoon Vanilla extract
  • ½ cup each of candy melts orange, green, or purple for Halloween
  • ½ cup Halloween sprinkles and candy eyes

Instructions

  • In a large saucepan over low heat, melt the butter. Add marshmallows and stir until completely melted and smooth.
  • Remove from heat. Add Rice Krispies cereal and stir until fully coated with the marshmallow mixture. Add Vanilla extract and mix well.
  • Press the mixture into a greased 9×13-inch pan using a buttered spatula or wax paper.
  • Let sit for about 30 minutes before cutting into squares or rectangles.
  • Meanwhile, all the colors of candy melts in separate bowls in a microwave until smooth. Dip each Rice Krispie treat halfway into the melted candy, using a butter knife to smooth the coating so it’s even.
  • Place the coated treats on parchment paper. While the coating is still warm, gently press candy eyes into place and sprinkle on halloween sprinkles if you desire. Allow the treats to set for about an hour before serving.

Notes

  1. Don’t overpack the pan – press the mixture in gently. Packing it down too firmly can make the bars dense instead of light.
  2. Storage – keep treats in an airtight container at room temperature for up to 3 days. For longer storage, wrap individually and freeze for up to 6 weeks.
  3. Fresh marshmallows make the best treats – older or stale marshmallows don’t melt as smoothly and can make the bars hard.
