Dark Chocolate Fudge with Almonds

Ingredients
  

  • 2 cups Dark chocolate chips 60% cacao
  • 1 cup Semi chocolate chips
  • 1 can Sweetened condensed milk
  • 2 tablespoon Unsalted butter at room temperature
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Almond extract optional
  • 1 cup Sliced almonds toasted for extra flavor

Instructions
 

  • Line an 8x8 inch square baking pan with parchment paper, leaving some overhang for easy removal. Lightly grease with butter or non-stick spray.
  • In a saucepan or nonstick skillet, melt the dark chocolate chips, semi-sweet chocolate chips, sweetened condensed milk, and butter over low heat. Stir continuously with a spatula or wooden spoon until smooth.
  • Remove from heat and stir in the vanilla extract and almond extract (if using).
  • Fold in the sliced almonds, reserving a few to sprinkle on top.
  • Pour the mixture into the prepared pan and smooth the top with a spatula.
  • Sprinkle the reserved almonds on top and gently press them into the fudge.
  • Chill in the refrigerator for at least 2 hours until set.
  • Once firm, lift the fudge out of the pan using the parchment paper and cut it into squares. Serve immediately or store in an airtight container.

Notes

  1. Heating should be done gently over low heat to prevent burning of chocolate.
  2. Store the  fudge in an airtight container at room temperature for up to one week. For longer storage, keep it in the refrigerator for up to two weeks or freeze it for up to three months.
  3. You can use either full-fat or low-fat condensed milk for this recipe; both work just fine.
