4slicespepper jack cheese
2tablespoonsunsalted butterat room temperature
Instructions
In a bowl, mix shredded chicken, mayonnaise, Dijon mustard, bell pepper, celery, red onion, lemon juice, salt, and pepper until well combined.
Spread the chicken salad evenly onto one slice of bread.
Place cheese slices on top of the chicken salad, then cover with the second slice of bread.
Spread butter over the top of the bread.
Heat a skillet over medium-low heat.
Place the sandwich in the skillet and grill for 2-3 minutes per side, pressing lightly, until golden brown and the cheese is melted.
