INGREDIENTS AND SUBSTITUTIONS

  • Brownie Mix: You will need one full box of brownie mix for this recipe. You can also use the cake mix instead.
  • Eggs: Use eggs at room temperature. Eggs will keep the brownies light. 
  • Avocado Oil: You will need half a cup of avocado oil. You can also use extra virgin olive oil or coconut oil.
  • Water: Water will bind the batter and prevent it from becoming too thick.
  • Chocolate Frosting: Frosting will help moisten the brownies and help shaping into balls.
  • Candy Melts or Chocolate: You can use candy melts or chocolate to coat the brownie cake pops. Depending on your preference, you can use either milk chocolate or dark chocolate.
  • Sprinkles: You can use Sprinkles for decoration. You can substitute them with crushed nuts, caramel crunch, or different colored chocolate.
  • Cake Pop Sticks (or Lollipop Sticks): Use food grade cake pop sticks or simple lollipop sticks for this brownie cake pops recipe.

INSTRUCTIONS (How to Make Cake Pops with Cake Mix)

Prepare the bownie batter according to the box mix instructions.

Transfer the brownie batter to a prepared pan and bake.

Allow the baked brownies to cool down for 20 minutes.

Crumble the brownies and add the chocolate frosting.

 Roll the mixture into 1-inch balls. Insert the cake pops sticks and freeze for 10 minutes.

Dip each chilled brownie ball into the coating, gently tapping off excess.

While the chocolate coating is still wet, add your favorite toppings. Sprinkle with colorful sprinkles for a fun look, crushed nuts for crunch, or a drizzle of contrasting chocolate for a professional finish. Work quickly so the decorations stick before the coating hardens. Place each cake pop upright in a styrofoam block, cake pop stand, or even a sturdy box with small holes poked in it. This keeps them from smudging or flattening while the chocolate sets.

Once the coating is completely firm, your brownie cake pops are ready to enjoy. Serve them as party treats, wrap them in cellophane for gifts, or display them on a dessert table.

Hint: Before inserting the stick into each cake pop, dip the tip of the stick into melted chocolate. This acts like glue and prevents the cake pop from sliding off.

VARIATIONS FOR BROWNIE CAKE POPS RECIPE

There are many ways you can alter and adjust this easy case pop recipe to your own taste or preference: 

  • Confetti Brownie Homemade Cake Pops Recipe: Follow the same recipe as above to make the brownie cake pops. Instead of dipping the balls in dark chocolate, dip them in white chocolate or white candy melt. Take confetti sprinkles and generously spread them on the coating.  
  • Halloween Brownie Cake Pops Recipe: Shape the cake pops into balls following the same recipe as above. Dip the balls in halloween themed candy melts, black, orange, purple, green. Decorate with halloween sprinkles or candy eyes. 
  • Pistachio Brownie Cake Pops Recipe: Follow the same recipe up until the dipping of cake balls. Use light green candy melts for coating the balls. You can also add a drop of food color to white chocolate for the same pistachio color. Finely chop pistachios and sprinkle them on the cake pops.

  • Mixing Bowls: For mixing the cake, frosting, and coating ingredients.
  • Hand Mixer: Used blend to make the cake batter. Even whisk will work.
  • Baking Pan: To bake the cake.
  • Cookie scoop: To make evenly-sized cake balls.
  • Lollipop Sticks: For creating the iconic cake pop look.

SERVING SUGGESTIONS FOR HOMEMADE BROWNIE CAKE POPS

Other Treats: You can serve these brownie cake pops with Pumpkin Hand Pies, Apple Cinnamon Waffles, or Puff Pastry Apple Turnovers. 

Coffee: Cake pops will be a brilliant idea with Vanilla Bean Latte. They can also be served with a Salted Caramel Latte for an added sweetness.

STORAGE AND REHEATING TIPS FOR BROWNIE CAKE POPS

Room Temperature:

Since this easy cake pop recipe is made with frosting, it’s best to keep it in an air tight jar at room temperature and consume within a day or two. If the temperatures are high and humid, don't leave them out for more than 6-8 hours.

Refrigerator:

Brownie cake pops can be refrigerated for up to a week in the fridge. Make sure you use a parchment paper lining at the bottom and between layers. Keep in an airtight box.

Freezer:

If you want to make them ahead of time save the leftovers, you can totally freeze them. Use parchment paper between layers and for lining the bottom of an airtight box. They can be frozen for 2-3 months. 

Thawing:

Before serving, put them in the refrigerator for 30-60 minutes or until they thaw. 

TOP TIPS FOR THIS HOMEMADE CAKE POPS RECIPE

  • Cut the crusty ends for soft and smooth cake pops. 
  • If the  balls don’t hold shape or are too dry, add a little more frosting.
  • Refrigerate the brownie and frosting mixture to cool if it becomes soft or hard to shape into balls.
  • Dip the stick in melted chocolate so that it will stick to brownie cake balls. 
  • Push the stick all the way to the middle of the ball to ensure everything holds.

Ingredients
  

  • 1 box brownie mix (Dark chocolate)
  • 2 eggs at room temperature
  • ½ cup avocado oil
  • 3 tablespoons water
  • ¼ cup chocolate frosting
  • 12 oz candy melts or chocolate milk, or dark
  • Sprinkles for decoration
  • Cake pop sticks or lollipop sticks

Instructions
 

  • Prepare and bake the brownies according to package directions in a 9x9-inch pan. Let them cool completely.
  • In a large bowl, crumble the brownies into fine crumbs. Remove any hard edges if desired.
  • Add frosting a little at a time and mix until the mixture is moist enough to hold together when rolled.
  • Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Chill in the freezer for 20–30 minutes.
  • Melt a small amount of candy melts. Dip the tip of each cake pop stick into the melted chocolate, then insert into each brownie ball. This helps secure the stick.
  • Melt the remaining candy melts or chocolate. Dip each chilled brownie ball into the coating, gently tapping off excess.
  • While the coating is still wet, decorate with sprinkles, crushed nuts, or drizzle with contrasting chocolate.
  • Place upright in a styrofoam block or cake pop stand to set.
  • Enjoy once the coating is firm.

Notes

  • Brownie base: You can use homemade brownies or a boxed brownie mix. Just avoid brownies with too many chewy edges, as the centers work best for rolling.
  • Sticks: Lollipop or cake pop sticks work best, but paper straws are a fun decorative option for parties.
  • Chocolate coating: Use melting wafers, almond bark, or tempered chocolate for a smooth finish. Adding 1–2 teaspoons of coconut oil helps thin thick chocolate.
  • Decorating: Sprinkles, crushed nuts, shredded coconut, or candy drizzle all stick best while the chocolate coating is wet.
  • Setting: If you don’t have a cake pop stand, a styrofoam block or even an upside-down colander works well to keep pops upright.
  • Storage: Store cake pops in an airtight container at room temperature for 2–3 days, in the fridge for up to a week, or freeze (undecorated) for up to 2 months.
